What I Had for Lunch Today: Pumpkin Scramble and Salad with Cranberries and Pepitas



This is a salad of romaine with a cooked, shredded veggie burger, dried cranberries, and pepitas, dressed with my usual olive oil, lemon juice, salt and pepper. I ate this with a scramble of pumpkin, onion, green pepper, salt, pepper, sage, and thyme. The pumpkin was some of the leftovers from Ali and Lindsay's pumpkin-carving session. Waste not, want not.
